We present an analysis of the food served at the Pignotte, the alms house of the Papal palace in Avignon, to 375 paupers and 20 other servants during the month of September 1375. The treatment that the two groups received presented marked differences. The paupers’ diet was made up only of bread, wine and meat or cheese, while the travellers, the ill and the servants received higher quality bread and wine and a more varied diet in general, including eggs, spices, fruit and fish; the ill were given chicken.
